Dried fruit color: what does it say about sulfites
Bright dried apricots and dark raisins may differ in preprocessing, raw materials and drying conditions. You cannot determine the composition based on color alone or choose a safe product if you are sensitive to additives.
Why do they preserve color?
Many fruits darken when cut and dried. Pre-treatment helps slow down color change; Various methods are used for this, including ascorbic acid and sulfites. Therefore, the preserved light shade does not in itself indicate the substance used. We need information specifically about fruit processing, and not just a beautiful photograph.
Pre-treatment is not the same as drying method
Sulfites can be applied before moisture is removed. This is a separate stage: the words “dried in the sun” or “dried with warm air” do not answer the question of how the raw materials were treated. When choosing a product, consider three characteristics: what fruit was used, how it was prepared and how it was dried.
When composition influences choice
Sulfur dioxide and sulfites are found in raisins, dried apricots and prunes, but are not present in every batch. If sensitivity to them is established, a product with a confirmed absence of these additives is selected. People with asthma have an increased risk of a reaction; Asthma itself does not prove sensitivity in a particular person.
How to compare two products
First, determine the task: to preserve noticeable light pieces in baked goods or to select fruit for compote, where the original color is less important. Then compare the actual composition and ease of cutting. The names “natural”, “chocolate” or “shady” do not replace this information and do not provide an independent basis for declaring a product safer. If there is no data on sulfites, do not turn a guess from color into a confident conclusion. For your first purchase, it is convenient to select a small quantity and check whether the texture is suitable for your dish, keeping the exact name of the selected product form.
