When do nuts need a refrigerator and freezer?

Cold helps preserve the flavor of nuts, especially shelled, roasted and chopped nuts. Airtight containers and portion sizes are also important: low temperature alone is not enough.

Why does taste change over time?

Nut oils oxidize and the flavor may become unpleasant or rancid. Oregon State University notes that hazelnuts deteriorate faster in quality after peeling and roasting; the pieces have more surface area in contact with air. Therefore, it is reasonable to plan the crushed stock for closer use than whole nuts.

Choose a mode to suit your schedule

The California Walnut Board recommends storing walnuts in the refrigerator or freezer, depending on when you need them. For a large purchase, divide the stock: leave a small part for the next dishes, remove the remaining portions separately. This way you won’t have to take out the entire volume every time for one handful. Label the name of the nut and the date it was opened on each serving.

Protect against odors and early chopping

The walnut is able to perceive the odors of neighboring products; It is especially undesirable to store it next to fish and onions without tight packaging. Chop, chop and grind the nuts close to cooking. If a recipe requires 100 g of crumbs, it is more convenient to measure out the kernels first rather than turning the entire purchased supply into crumbs.

Don't assign all nuts the same deadline.

The period depends on the type, original condition, processing and packaging. For example, well-packaged hazelnuts will last longer in the freezer than in a warm kitchen, but this does not mean the same guaranteed shelf life for any mixture or sweet coating. Follow the specific product terms and conditions. When planning, focus on the frequency of cooking: regular small purchases are often more convenient than a large supply that you do not have time to use. Cold storage preserves quality but does not make spoiled kernels usable again.
