Granola and dry mixes: small batches for home

When to combine cereals, nuts and soft dried fruits so that homemade granola retains the desired texture.

Choose a base and a clear recipe

Granola requires a recipe with a specific ratio of cereal, seeds or nuts, oil and sweetener. Oregon State University's version uses rolled oats, sunflower kernels and raisins. If you only want the dry mixture to serve, additional baking may not be necessary. Determine the end goal before heating the food.

Add soft fruits at the right stage

In the Oregon State University skillet granola recipe, the raisins are introduced after the base is removed from the heat; then the mixture is cooled. This is a specific way to preserve the fruit addition in a recipe like this. Don't assume that all ingredients need to spend the same amount of time in the oven. For other granola, follow its sequence and monitor the readiness of a small test volume.

Why does the crunch disappear over time?

The Almond Board whitepaper explains moisture movement: almonds can gain or release moisture depending on their environment. When wet, the crunch changes. The rule of thumb for serving at home is to avoid mixing the crunchy base with yogurt or juicy fruit ahead of time if you want to maintain a contrast of textures. It is convenient to keep dry and wet parts separately until eating.

Make a small repeatable batch

Cool the prepared base before sealing and store it in an airtight container. Write down the ingredients and date of preparation to repeat a successful combination. Add milk, yogurt and fresh fruit when serving. The composition of the base also matters: powdered milk is optional in the original recipe, but adding it changes the composition of the mixture. Consider new nuts, seeds or chocolate inclusions as separate ingredients and not as inconspicuous decorations. The signature helps account for these changes.
