Roasting and drying nuts: different tasks
Drying prepares the crop for storage, while roasting changes the aroma, color and crunch. The same nut can go through both stages, but the processing conditions are not interchangeable.
Define your goal first
When drying, the task involves removing moisture. Roasting almonds, as described by Almond Board, is used to change flavor, color and texture; There are hot air treatment and oil frying. The word "fried" therefore does not indicate whether oil was added, nor does it indicate the amount of salt or other ingredients.
Don't heat all types equally
Utah State University lists different methods for almonds, pumpkin seeds, and pine nuts. It is not worth transferring the time of one product to another. For the first batch, choose a proven recipe for a specific type, distribute the product evenly and monitor the progress of cooking. A large pile of kernels heats up differently than a small, even layer.
Cooling is part of the process
Almond Board emphasizes the need for uniform processing, rapid cooling after processing, and protection from oxygen during storage. Therefore, after achieving the desired result, do not leave the nuts on the hot baking sheet without attention. Cool first, then store in a suitable container. For future baking, keep in mind that the already roasted nut will again receive heat inside the dish.
Fragrance does not prove safety
Commercial disinfection processes are controlled separately. The University of California explains that the presence of dangerous bacteria cannot be determined by smell, taste or appearance; Refrigeration and freezing also do not kill Salmonella. The home regime chosen for the sake of aroma does not in itself confirm disinfection. Start with a suitable food product and do not use frying to salvage suspect ingredients. Recommendations for industrial processing do not mean that such processing has been confirmed for a particular catalog item.
The main thing in practice
- Drying removes moisture, roasting develops flavor and color.
- The mode depends on the type, size and shape of the product.
- Regular home roasting is not proof of disinfection.
