Caliber, halves and core output
Halves for decoration, crumbs for filling: choose the shape of the nut and calculate how much peeled kernel is needed for the dish.
What does caliber mean?
For almonds, designations like 23/25 indicate a range of kernels per ounce, approximately 28.35 g. In this system, a lower number corresponds to larger kernels. This is a way of describing size, not a universal assessment of taste. Do not transfer the designations of almonds to pistachios or walnuts: grading systems differ.
Halves and pieces
The USDA distinguishes between halves, mixed with chunks, and fines. Color and defects are assessed separately: a crushed kernel is not necessarily worse.
How much will be left after cleaning?
Weigh the sample before and after cleaning. The core share will help evaluate the purchase for that batch; The mass of the shell is not included in the amount of filling.
What to write down in the order
Specify the edible mass and purpose: serving, decoration or grinding. For inshell nuts, consider cleaning; compare the cost of a suitable core.
The main thing in practice
- Gauge refers to size.
- For the recipe, consider the peeled kernel.
- The pieces are suitable for filling.
