Cranberry
For dried cranberries, technology is especially important: the naturally acidic berry is often turned into a sweetened product.
Large-fruited American cranberries should not be automatically equated with all wild cranberry species. The type of specific raw material must be confirmed.
Dried whole berries, halves and the product after soaking have different textures. The label “cranberry” does not itself indicate the only ingredient.
History
North American culture
Kew places the big cranberry's native range in Canada and the northern and eastern United States. Modern plantations and wild places are not the same thing.
From local forms to selection
UMass describes the heritage varieties Early Black and Howes and the selection Stevens. They differ, in particular, in the ripening time and properties of the berry.
Regions and differences
North American industrial cranberries
The list refers to the industrial areas studied in the United States and Canada, and does not apply to all wild cranberry species around the world. Statistics for 2024–2025 do not indicate the volume of the current batch.
Wisconsin, USA
Wisconsin is one of the top commercial cranberry states counted by the USDA along with Massachusetts, Oregon and New Jersey.
The regional share of production does not determine the sweetness of the dried product: sweetening occurs during processing.
For porridge and baked goods, focus on the composition and size of the pieces.
Southeastern Massachusetts, USA
The UMass Cranberry Station operates here, researching varieties and harvesting. Cleaning can be dry or with flooding of the area.
When picked wet, separated berries float; This is a harvesting technique, and not growing fruits constantly under water and not a drying method.
Do not choose dried cranberries based on a photograph of a flooded field: it does not reveal the future composition of the product.
Quebec, Canada
According to Agriculture and Agri-Food Canada's 2024 survey, Quebec is Canada's leading cranberry-producing province.
The report distinguishes between conventional and organic growing. Organic status requires certification of specific products.
If growing method is important, look for batch certification; check the sweetness separately.
British Columbia and New Brunswick, Canada
British Columbia is Canada's other major belt, and New Brunswick is also highlighted in the federal industry survey.
Western and Eastern supplies do not produce two guaranteed flavor types of dried cranberries.
Compare samples by softness, presence of sugar and cut shape.
Types and processing
No sweetening
This composition must be confirmed by labeling: the word “dried” does not establish it.
For dishes where berry sourness is needed and sugar is separately regulated.
Sweetened dried
USDA ARS separately studies sweetened dried cranberry: it is a processed product in its own right.
Dessert mixes and baked goods; Compare added sugar and serving.
Early Black, Howes, Stevens
Varieties have different ripening times and fruit characteristics. These names are only useful if the varietal identity is documented.
For a meaningful comparison of producers, and not to guess the variety by dried berries.
Drying this product
The McGill study compares hot air to other methods of drying cranberries after the osmotic stage. It shows the availability of technology, and not the mode of a specific manufacturer. About the method
In the study, cranberries were previously kept in a solution of sucrose or glucose-fructose syrup, then dried. Therefore, “dried” does not mean no sweetening. About the method
How to choose
- First look at the ingredients and sweetening, then the country and color.
- The halves are convenient for even distribution in the dough; large pieces - for separate serving.
- Berry type and organic status require confirmation rather than guessing from the packaging image.
