Black and white sesame: which one to choose for your dish

For sesame, not only color is important. Compare the presence of the shell, roasting and the desired form: whole seeds for sprinkling, grinding for sauce or paste. Then it’s easier to choose a purchase for a specific dish.

Color and cleaning are two different signs

Black, white and golden sesame are distinguished by the color of the seed shell. At the same time, light sesame can be either shelled or peeled: white color in itself does not mean that the shell has been removed. In the description of the purchase, it is useful to separate two questions: what color are the seeds and whether they have been peeled.

For example, let's say you're looking for a light-colored topping for your buns. For this task, appearance is really important. If you are going to make paste, further clarify the cleaning and look at what product is indicated in the recipe. The phrase “I need white sesame” in these two cases may lead to different purchases. It is better to immediately name the dish and the desired treatment.

Check roast before cooking

Raw and roasted sesame should not be chosen based on the photo alone. Roasting changes the aroma; The black color of the seed does not in itself mean that it has already been fried. If you need a product to be added directly to a finished dish, check whether the manufacturer allows this use. For home roasting, look for appropriate instructions in the description.

Don't give all the seeds the same amount of time in the pan. It makes more sense to start with a small trial batch and instructions for the selected product. For already toasted sesame seeds, reheating is a separate solution and not a required step in every recipe. It is especially important to check this before baking, where the topping will still be heating in the oven.

For sprinkling, choose a visible result.

On light rice or noodles, black seeds give a noticeable pattern. You can choose white ones if you want a more relaxed design for buns, bread or salad. Test one portion: scatter some seeds, evaluate the appearance and taste, then decide whether you need to add more. You don't have to mix two colors just because you have both on hand.

If you are cooking for several people, you can leave part of the dish without sprinkles and offer sesame seeds separately. This makes it easier to take into account the tastes at the table. For a family dinner, this is more convenient than covering the entire shared plate with seeds in advance. In our catalog cards, regular sesame is offered for bread and sauces, black sesame is also offered for rolls and rice.

Grinding is important for sauce, recipe for pasta

Whole seeds, crushed sesame seeds and paste give different flavors to the dish. For a dressing where you want to see individual grains, start with a small amount of coarse grind. For a more uniform result, look for a recipe specifically for sesame paste. Whole seeds do not automatically replace prepared paste, even if their weight is the same.

For tahini, check the recipe for three characteristics at once: whether the sesame is peeled, whether it is roasted, and what kind of grinding is required. For a dark paste or dessert, first prepare a small portion with black seeds: the appearance of the dish will change with the ingredient. Write down a successful combination, indicating the exact product, and not just the word “sesame”.

Changing the color does not solve the allergy issue

White and black sesame are still sesame. If you are allergic to it, another color cannot be considered a safe substitute. If you are cooking for a guest with such a restriction, agree on the composition of the dish in advance and check the prepared sauces, pastes and seasoning mixtures: sesame may already be included in their composition. Simply removing visible toppings does not change the composition of the sauce used.

Buy for upcoming dishes

Before ordering, write down two or three tasks: for example, buns, rice and homemade dressing. Compare “Sesame” and “Black Sesame”, specify cleaning, roasting and available packaging. For the first acquaintance, a small quantity is more convenient than a large supply. Store seeds closed, away from sun, heat and humidity, observing the labeling. Do not pour your new purchase into an unnamed jar: the saved name will help you repeat the dish you like.
