Banana and banana chips
Crispy banana chips can be fried, and soft dried slices can be dehydrated without frying. The word “banana” alone is not enough to compare the composition.
Dessert bananas and the starchier culinary types have different uses. They cannot be considered one variety.
For chips, you need to figure out the cooking method, oil and sweetening. Crunching does not prove sublimation or absence of oil; The SKU name does not reveal the technology.
History
Giant grass
Kew describes banana as a herbaceous plant with a false stem. Domestication and selection have produced seedless cultural forms; the usual Cavendish is only part of the variety.
Processing of culinary bananas
ICAR describes the chips industry as having extensive processing in India and the Philippines, with local units in Kerala and Tamil Nadu. Unripe fruits are also used for processing.
Regions and differences
Selected regions of raw materials and processing
The review combines the historical geography of FAO export orchards with more recent national information from India and the Philippines. It does not cover all global banana production and does not indicate the origin of store-bought products.
Kerala and Tamil Nadu, India
ICAR connects Kerala with culinary Nendran and profiles the local banana chip industry.
The culinary purpose of the variety differs from the usual dessert Cavendish. The type of oil and the recipe of the chips remain separate characteristics.
To become familiar with regional techniques, look for the specified variety and composition; don't count all the Nendran chips.
Davao and Northern Mindanao, Philippines
The Philippine Statistics Authority identifies these zones in banana production; statistics distinguish between Cavendish, Saba, Lakatan and other types.
Several groups of bananas are grown in one country. The region report does not identify the variety or technology of the finished snack.
Compare salty, sweet and plain options based on ingredients, not just the country's flag.
Guayas, Los Rios and El Oro, Ecuador
The FAO documents these coastal provinces as banana export zones.
The export of fresh bananas and the production of chips are different chains. The reputation of a supplier of fresh Cavendish does not prove anything about a particular snack.
To purchase chips, please inquire about the manufacturer, composition and type of processing.
Types and processing
Dessert bananas
Many dessert forms come from Musa acuminata; Cavendish is a well-known trading group.
Fresh delivery and soft fruit preparations at suitable ripeness.
Culinary types and plantains
Plantains tend to be starchier and less sweet; they are often prepared. Nendran is a particular example of a culinary banana.
Frying and other dishes that require a dense structure of raw materials.
Fried chips
The FAO describes the chips as sliced bananas that are dehydrated by frying. Oil affects the composition of the finished product.
Crispy serving; Compare fats, sugars and salt by labeling.
Dried slices
Water is removed by drying; softness and crunch depend on maturity, thickness and technology.
For porridges and mixtures, if you need a dried rather than fried product.
Drying this product
In the FAO training example, banana slices are laid out in the sun before frying. This is a combined process: the presence of drying does not cancel subsequent frying. About the method
A dehydrator or dehydrator can remove water from fruit without frying. For a banana snack, such technology needs to be confirmed, and not guessed by appearance. About the method
How to choose
- The first question for the chips is whether they were dried or fried, the second is what kind of oil and whether there is sugar.
- For comparison, use the same weight of the finished product, not the number of slices.
- The country of cultivation, variety and place of manufacture of the snack may vary.
