Freeze-dried strawberries: how to choose and use in desserts

Crispy pieces for decoration, berry crumbles for yogurt or powder for cream - freeze-dried strawberries have several culinary roles. A successful purchase begins with the question of what result you want: retaining noticeable pieces or distributing the berry flavor throughout the dessert. The form of the product and the method of addition depend on this.

What does "sublimated" mean?

When freeze-drying, the product is first frozen, then water is removed under vacuum conditions: the ice turns into steam, bypassing the liquid state. This differs from both conventional freezing and warm air drying. The result is a light, dry product that is convenient to use in small portions.

A piece of such strawberry can be fragile and crunchy. But the word “sublimated” describes the processing method, not the entire composition of the package. It does not represent the absence of sugar or other additives and does not replace the ingredient list.

What to find out before buying

First, check the form: whole berries, slices, pieces or powder. For open cake decoration, the appearance is important, and for the cream, the ability to evenly mix in the strawberries is important. Don't choose based on the photo alone: ask what shape is actually in the package being sold.

In our catalog, strawberries are sold individually. Before comparing with another offer, check the net weight of one package, composition and storage conditions. Price per piece without this information does not allow for a fair comparison of the cost of the same number of berries.

Choose a dessert shape

Slices and noticeable pieces are convenient where the berry should remain part of the decoration. The crumbs can be sprinkled on yogurt, ice cream or a finished dessert. If you need to spread strawberries over a cream, glaze or filling, a fine powder is more convenient: this is exactly the kind of application that King Arthur Baking's culinary practice shows.

Purchased pieces can be crushed using a dry grinder immediately before cooking. It is not necessary to grind the entire package: set aside some for decoration and grind only the desired portion. So one product will give both a berry accent inside and noticeable details on top.

Start with a small sample of the cream

If the selected recipe is for berry powder, follow the quantities and mixing order. To make your own combination, first combine a little cream with a small portion of chopped strawberries. Evaluate the taste, color and texture, and then repeat the successful ratio in the bulk.

Fresh berries, puree and dry powder add different amounts of water. Therefore, you cannot automatically replace them with the same mass, especially in baked goods. It’s more convenient to start with a proven recipe for a freeze-dried product than to try to fix an already assembled dessert.

Decide whether you want crunch or softness

Dry pieces gain moisture and change texture. If you want some crunch on your yogurt or cream, add a garnish closer to serving. If you want a soft berry part inside the dessert, contact with a wet base is up to the task. These are different results, not necessarily a successful and unsuccessful product.

For a cake that will sit until serving, try your chosen design on a small portion in advance. Don't promise yourself that the dry topping will stay the same on any filling: base moisture and waiting time matter.

Close the package immediately after portioning.

Remove the desired portion with a dry spoon and close the rest tightly. If the original bag cannot be securely sealed, use a suitable sealed food container. Keep it according to the conditions on the marking, away from steam and wet work surfaces.

Do not assign months to open packaging under the general sublimation clause. Conditions after opening are clarified with the manufacturer. For home cooking, it is more practical to buy quantities for the intended desserts and save the label so that the ingredients and recommendations remain at hand.
