Chinese tea: how a leaf becomes a craft
The taste of tea begins with the collection and processing of the leaves. The history of Chinese tea is about the work of masters and the transfer of their skills.
Many teas, many receptions
In describing Chinese tea traditions, UNESCO distinguishes six categories: green, yellow, white, oolong, black and dark tea. Re-processed teas, such as flower-flavored teas, are also mentioned. Differences appear in leaf shape, aroma and taste. The term “Chinese tea” therefore defines a broad geographical framework, within which there are many individual products and ways of working with raw materials.
What happens during processing
The teaching material from the Tamil Nadu Agricultural University examines the production of black tea: withering, rolling, oxidative processes and drying. Changes in the leaf affect the properties of the infusion, and controlled drying completes the process and helps produce a stable product. This sequence describes a specific technology branch. It would be a mistake to transfer it without changes to all categories of tea: the method of processing the selected type is important.
Knowledge lives with people
In Chinese tradition, drinking tea accompanies everyday meetings and ceremonies; tea is served at home, in teahouses, restaurants and other public spaces. Knowledge is passed on within the family and through apprenticeship. Among the bearers of tradition, UNESCO names not only those who grow and process tea, but also masters of tea art and making sweets. The cup brings together the work of people with different skills.
How to read a tea blend description
To get acquainted with a new tea, it is useful to separately consider the leaf base and additives: what exactly is processed, flavored or sweetened. The history of the tea leaf does not establish the origin of the finished blend with navat. When comparing drinks, write down the name of the base and follow the brewing directions on the packaging - this will make it easier to associate the impression of the cup with the product you chose, and not just with the general name.
The main thing in practice
- The category of tea is associated with processing and taste.
- Drying is one stage of technology, and not an explanation of all the differences.
- For the finished mixture, check the tea base and additives separately.
